Hinai-jidori is one of Japan’s three designated premium chicken breeds, raised free-range in Akita’s Hinai region for around 150 days — twice as long as standard poultry. The meat is firmer, richer and far more intensely flavoured than supermarket chicken. Taste it in kiritanpo hot pot, grilled yakitori, an oyakodon rice bowl, or even as chicken sashimi at specialist restaurants.
