Inaniwa udon, from Akita’s Yuzawa region, is one of Japan’s three great udon alongside Sanuki and Mizusawa — distinguished by its extraordinarily thin, silky-smooth strands made through a laborious multi-day hand-stretching process. Served cold in summer with dipping broth, or warm in a clear dashi, it is a study in refined simplicity.
