Mentaiko — spicy marinated pollock (or cod) roe — is one of Fukuoka’s most iconic foods, and the city of Hakata is considered its Japanese home. The roe sacs are cured in a marinade of chilli, and sometimes sake and other seasonings, giving a savoury, salty, gently spicy flavour and a distinctive popping texture from the tiny eggs. It is endlessly versatile: eaten simply with hot rice, grilled, stuffed into rice balls, blended into creamy mentaiko pasta (a Japanese invention), added to toast, and used across the region’s cooking. Mentaiko is also Fukuoka’s most popular edible souvenir, sold beautifully packaged at the airport and stations. Salty, umami-rich and moreish, it is a distinctive taste of Hakata to try in dishes and take home.

Tips

Try mentaiko simply over hot rice first to taste it at its purest, then in creamy mentaiko pasta, which is a delicious Japanese classic. Buy vacuum-packed or refrigerated mentaiko as a souvenir near the end of your trip since it needs to stay cool, look for milder versions if you’re sensitive to spice, and note that some brands offer additive-free options.
