Hiroshima okonomiyaki looks simple and is deceptively hard: the layering, the timing and above all the flip of a tall, loose stack take real skill, which is exactly what makes a cooking class here so satisfying. In a small group around a teppan griddle, an instructor walks you through spreading the thin crepe, piling on the cabbage and pork, steaming it down, frying the noodles alongside and finally combining and flipping the whole thing without collapse, before finishing with sauce, seaweed and bonito flakes. You then eat what you have made straight off the hot plate — and understand exactly why the local version is built, not mixed.

Tips
Book ahead and check the class runs in English if you need it, as small classes fill quickly. Come hungry — you eat a full okonomiyaki at the end — and don’t worry about the flip going wrong, which is half the fun and something the instructor will rescue; the class also makes the difference between the Hiroshima and Osaka styles immediately obvious.
