Satsuma-age is one of Kagoshima’s most famous foods, a deep-fried cake of ground fish paste that originated in the old Satsuma domain (now Kagoshima) and spread across Japan. Fresh fish is minced into a paste, blended with local sweet potato starch and a touch of sweetness (and often a splash of local shochu), shaped and deep-fried until golden, giving a savoury, slightly sweet, springy and satisfying result quite different from steamed kamaboko fish cake. It comes in many varieties — plain, or filled and mixed with ingredients like burdock, vegetables, cheese, boiled egg, squid or octopus — and in countless shapes. It’s delicious eaten hot and fresh from the shop, added to oden hotpot or noodles, or bought vacuum-packed as a popular Kagoshima souvenir.
