Sasa kamaboko is a Sendai speciality — a grilled fish cake made from white fish paste, shaped like a bamboo leaf (sasa) and hand-fanned into its distinctive form before grilling over an open flame. It was created over a century ago as a way to preserve the abundant white fish catches of Miyagi’s coast, and remains a beloved snack and souvenir, with a smoky exterior and springy, delicately sweet interior.
