Chicken nanban (chikin nanban) is Miyazaki’s most famous home-grown dish and a nationwide favourite that originated in the city of Nobeoka. Pieces of chicken — usually thigh — are battered and deep-fried until golden and crisp, then dipped while still hot into a sweet-and-sour ‘nanban’ vinegar sauce (soy, vinegar and sugar), which soaks in to give a wonderful sweet-tangy flavour. The dish is then generously topped with a thick, creamy tartar sauce made with mayonnaise, chopped boiled egg, onion and pickles. The combination of hot crispy chicken, sweet-sour glaze and rich, cool tartar sauce is irresistibly delicious and deeply satisfying.
