Hyuga-natsu is a beautiful golden-yellow citrus fruit that is a speciality of Miyazaki (historically Hyuga province), grown in the sunny prefecture and prized for its refreshing flavour and fragrance. Roughly the size of a small grapefruit with a smooth, pale yellow rind, it has a uniquely delicate, sweet-tart, aromatic taste. What makes it special is the traditional way of eating it: unlike most citrus, the fluffy white pith (the spongy layer under the peel) is not discarded but eaten together with the juicy flesh, as it’s sweet and pleasant — the fruit is peeled thinly like an apple to leave the white layer on, then sliced. This gives a lovely contrast of tart flesh and mild sweet pith. In season from spring into early summer, hyuga-natsu appears fresh, in juices, jellies, sweets and dressings. Refreshing and distinctive, it’s a delicious taste of Miyazaki.
