Nodoguro, the blackthroat seaperch (akamutsu), is among the most luxurious fish in Japanese cuisine, and the Sea of Japan coast of Shimane is one of its finest sources. Named for the black throat inside its red-tinged body, it has an unusually fatty, delicate white flesh so rich that it is nicknamed ‘the white toro of the sea’. It commands very high prices at auction and is treated as a special-occasion fish. In Matsue and along the San’in coast it is served in every top preparation: grilled with salt to render the fat, as nigiri sushi, simmered in a sweet-savoury nitsuke, or seared.
