Imoni is Yamagata’s most beloved seasonal dish — a hearty taro root and beef stew simmered with konnyaku, leek and a soy-based broth over an open fire on the riverbank in autumn. Imoni parties (imonikai), where friends gather to cook huge pots together, are a deeply embedded autumn ritual. The Yamagata Imoni Festival takes it to an extreme with a 6.5-metre iron pot feeding 30,000 people, stirred with a crane-mounted paddle.
