Izumo Soba (Warigo Three-Tiered)
Izumo soba is made from whole buckwheat flour, giving the noodles an earthy fragrance and dark speckled colour distinct from lighter Tokyo varieties. The signature way to eat it is warigo-style โ three stacked lacquerware boxes of cold soba eaten in sequence, each with different toppings including grated radish, green onion, and nori.
